Troy Nahumko is an award-winning author based in Caceres, Spain. His recent work focuses on travels around the Mediterranean, from Tangier to Istanbul. As a writer and photographer he has contributed to newspapers and media such as Lonely Planet, The Globe and Mail, The Sydney Morning Herald, The Toronto Star, The Irish World, The Straits Times, The Calgary Herald, Khaleej Times, DW-World and El Pais. He also writes a bi-weekly op-ed column 'Camino a Ítaca' for the Spanish newspaper HOY. As an ESL materials writer he has worked with publishers such as Macmillan and CUP.

I've been shopping here in Spain for years, yet for some reason these have flown under my radar till I spotted them the other day. Don't have the time to make a Spanish Omelette but can't bring yourself to buy the shrink wrapped ready made ones? Here's your solution! Pre-fried potatoes with onion, just add eggs!

I could have used a bottle of these before whipping one up with what passes as olive oil in Canada this summer!
